My lunch, Avocado and white bean salad with apple cider and red onion potatoes.






So today I needed a quickish lunch and I came up with this! Avocado and white bean salad and apple cider and red onion potatoes! I also had a couple of my 'My boy/girlfriend has dumped me cookies' left over, which I am about to eat as I write this!

Avocado and white bean salad:
Half a avocado sliced into cubes
1 can of butter beans drained
Half a head of seasonal lettuce chopped into strips
Two hand fulls of washed spinach
Good glug of olive oil,
Tsp of sweet chilli sauce.
Tbsp of nutritional yeast flakes.
salt and pepper to taste.

First get your salad potatoes on to boil in some salted water for the potato part of the lunch. Meanwhile add all your veg leaves and beans to a bowl and add the oil, chilli sauce, yeast and salt and pepper to the salad and give it a good mix. The avocado will break down a bit and will give a wonderful creaminess to the dressing. Easy!

Apple cider and red onion potatoes:

Boiled new potatoes (I do about 5/6 per person of course you can do more or less)
Half an apple chopped small
Half a red onion chopped small
3 Tbsp of olive oil
1 Tbsp of Apple cider vinegar
Two sprigs of rosemary chopped fine
salt and pepper

So while your potatoes are finishing up, place the onion, apple and rosemary in a bowl. Add the vinegar and oil, salt and pepper. The acid in the apple cider vinegar will start to cook the red onion and take away that harsh burning onion flavour. Once tender drain the potatoes and add straight to the bowl, the steam will evaporate and those potatoes will suck up all those flavour like a sponge! Test for seasoning. Yummy! Now plate up and enjoy!!!

My boy/girlfriend has dumped me* cookie recipe.

*This recipe could also be called the 'I just got sacked', the 'I just got a terrible haircut' or the 'I just got caught out in a rainstorm' cookie. Okay so, the answer to life's downers can't be found in the bottom of a bowl of cookie dough, but these chewy, gooey, damn gorgeous cookies will certainly be your shoulder to cry on while you look for them! And if you are still not convinced these are the best treatment for a heavy heart, let me tell you a) you can eat the dough straight from the spoon or add it to ice cream, b) it is a one bowl required, stick it all in and stir kinda recipe and c) you make a batch of 9 and have some dough left to refrigerate or freeze for when you need that next hug!

Okay so I will be quiet now and just give you the recipe

1/2 cup brown sugar
1/4 cup  of golden caster sugar
2/3 cup oil ( flavourless such as sunflower or canola)
1/4 cup of soya milk
1 tbs of cornflour
2 tsp of vanilla extract
1 1/2 cup of plain flour
1/2 tsp of baking powder
1/2 tsp salt
3/4 cup of choc chips

Heat the oven to 200c .Mix the sugars, oil, milk, and cornflour with a whisk to make a caramel like consistency. Add the vanilla, flour, baking powder, salt and choc chips and stir until a stiffish dough forms. Roll into ping pong size balls and flatten on a baking sheet lined with baking paper. The cookies will spread so I only put 9 cookies at a time on the baking sheet with a good amount of space between each one.
Cook for 8 mins, no longer as you want them to keep really chewy!
Then eat them! and I promise that the world won't seem as bad.

Wedding cake!!!














Today I made a beautiful wedding cake for a vegan bride. It was hard work and took me around 15 hours in total. Mostly because each layer was a different kind of cake! The Biggest bottom layer was a lemon sponge with vanilla butter cream, the middle layer was a chocolate cake with a chocolate ganache centre and  the top layer was an Italian fruit cake called certosino which contains choc chips, cherries, cardamon, fennel seeds, orange peel, brandy, whole almonds, apples and lots of other goodies! There was also a small 6'' gluten free cake which was an almond chocolate cake with chocolate ganache! So no wonder I was feeling tired by the end of today!

Meanwhile I actually got a day off yesterday! I'm not complaining tho, I am blessed to be this busy! But it is lovely to spend some time with the boy. So Kyle and I went on a soya latte date! It's our favourite pastime. However Kyle was naughty and I made him sit under the table.

I just read that...

every time you eat a meal free of animal products, you save 2.5 lbs. of greenhouse gas emissions, 24 square feet of land, and 133 gallons of water. If you eat three meals a day, that totals 2,737.5 lbs. of greenhouse gas, 26,280 square feet of land and 145,635 gallons of water per year! Isn't that amazing?!

Last weekend I had a samples table in Rainbow as part of national vegetarian week, and it was great! I got to meet some wonderful people who with their small business, are really changing how we can eat! From vegan beers (Kyle had a sample or two), a movement called the slow food network, to a great gluten free baker. It was wonderful! I also met some new customers and a man who said he was now regularly buying my cakes! I hope Rainbow do it again soon!
